Eat Local
Here we are, the halfway point!
This week's challenge was to eat local. And I'll admit it, I'm lazy. I don't come home from the farmers' market loaded with local produce that I lovingly coax into culinary masterpieces. But, I did swing by the
Saint Norbert Farmers Market
over the weekend to pick up fresh Ezekiel bread from the
Bread Lady
, locally made pickles, raspberry preserves, zucchini relish and plum jam from
Grammie's Jams, Jellies and Preserves
, and even a few crab apples.
I cut the bread into thick wedges and topped it with a generous serving of the jam and a little brie for breakfasts, added the pickles and relish to a sub sandwich for dinner, and snacked on crab apples all week long. The preserves were lovely piled high on these pancakes (minus the chocolate chips), cottage cheese or greek yogurt.
On Tuesday I grabbed pizza for lunch at The Red Ember, a new food truck in Winnipeg that houses a wood burning pizza oven and uses high quality, Manitoban ingredients. A perfectly crispy and chewy crust, bubbling cheese and a sprinkle of fresh basil: my mouth waters just thinking about it again.
All in all, I think I found ways to use local ingredients to enhance the quality and mindfulness of my eating. How'd you do?
